Breakfast Sushi

My dear friend Lisa of @eatcleanla inspired me to make this breakfast sushi. It is absolutely delicious and looks impressive! Don’t worry, it will be our little secret that it is super easy to make.

You will need smoked salmon, spinach, and 2 eggs. Of course you can add more ingredients and use more eggs. Spray a non stick pan with coconut oil and heat to medium heat. Lightly beat the eggs in a bowl and pour into the pan. Leave the eggs alone to cook in one flat layer, do not flip. When cooked through, slide onto a plate. Place a layer of spinach on top of the eggs, then top with a layer of thinly sliced smoked salmon. Carefully roll this into a sushi roll, starting from one of the edges. Tightly roll until you get to the other edge. Next, cut the roll into little section about an inch or so wide to make a cut sushi roll. The colors are vibrant and it looks and tastes so good! The added bonus is you are getting lots of protein and omega 3’s.

The posibilities are endless for flavor combinations. I’m so glad I tried this and you will be too!

Cha Cha Cha Chia….Pudding

I am always on the hunt for healthy, easy, delicious breakfast options and recently have been obsessed with Chia Pudding. It is super easy to make and has a tapioca-like texture with a slight crunch and is packed with anti-inflammatory omega-3’s.

You will need chia seeds, I buy mine from Trader Joe’s, vanilla, light coconut milk (the kind in a can), and honey or agave if you prefer. In a small bowl, you will mix 1/4 cup chia seeds, 1 cup light coconut milk, 1 tsp vanilla, 1 tsp honey. Simply stir until combined and pour into a mason jar or other air tight container and chill in the refrigerator overnight. In the morning, you will wake up to thick, creamy chia pudding that can be topped with fresh fruit or eaten plain. This fiber rich treat can be eaten for breakfast or a snack and will help you debloat. I love how fool proof this is to make and that it is perfect for people that need something ready to grab and go.

Two Ingredient “Pancakes”

One of my favorite healthy breakfasts to make only takes two ingredients. Two eggs and a ripe banana. These make up thin, crepe like pancakes that are light and delicious.

Peel one ripe banana and put into a bowl. Blend well with a hand mixer to create a fluffy banana base. Crack two eggs into the banana puree and whip until frothy. Take a 1/4 measuring cup and measure out this amount of batter and pour onto a greased, preheated pan. The pan must be heated just below medium heat because these pancakes cook quickly and tend to burn fast. I use coconut oil spray to grease the pan. Use a metal spatula a flip the pancakes once the top is covered in bubbles and the bottom is a beautiful golden brown color. They will only need about 30 seconds to finish cooking on this side.

Once they are all ready, put on a plate and you can top with fresh fruit, greek yogurt, agave or all three!
