Scrumptious Strawberry Muffins and Bread

I bought some beautifully ripe strawberries this morning and was inspired to make strawberry muffins.

You will need the following ingredients:

3 cups of All-Purpose flour, 1 tablespoon baking  powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1 1/2 tablespoons cinnamon, 1 1/4 cup milk, 2 large eggs lightly beaten, 1/2 pound (2 sticks) melted butter, 2 cups diced fresh strawberries, 1 1/2 cups sugar, 1 teaspoon vanilla.

Mix all dry ingredients together in a large mixing bowl except sugar. Mix wet ingredients in a smaller bowl. Create a well in the dry ingredients and pour the wet ingredients into the well. Mix until combined. Add sugar and strawberries and mix until combined. Pour batter into muffin tins and bake for 20 to 25 minutes or until golden brown at 350 degrees. The batter made 12 muffins and I also used a medium sized bread pan to make bread as well.

The muffins and bread were so delicious and the strawberries were juicy and so full of flavor. The hints of cinnamon provided a warm comfort throughout every bite. I delivered them to a few friends today as a nice surprise on this warm California day.

Sweet Corn Pudding Dreams

STK sweet corn pudding…it’s what dreams are made of.

I am from Nebraska and there are always little stands on the side of the road during the summer months that sell sweet corn. The farmers always tell you it is the best you will ever have. That is the true farm to table goodness that I grew up with and delicious corn I am used to. Well, the sweet corn pudding at STK may not be what I ate as a child, but it sends my tastebuds racing down memory lane with every smooth, creamy, sweet bite. The dish is heavy, but fluffy and features multiple textures, including whole corn kernals to delight your palate. It is one of the best sides I have ever had and dare I say, may outshine some of the main dishes?! It is true and I challenge you to beg to differ with me.

I do not frequent STK, but am always happily reminded that the food is always comforting and I end up savoring every last bite. You can get your fix of the sweet corn pudding in Los Angeles, New York, Atlanta, Washington DC, Miami, or Las Vegas.

Berrylicious Smoothie

I was inspired by the Berrylicious Smoothie at Kreation to try to replicate it at home. Their version is delicious, but mine came pretty darn close.

Blend together 6 raspberries, 5 large strawberries (I used Harry’s berries from the farmer’s market), 1/4 cup coconut water, 1/2 cup coconut milk, one small banana, one spoonful of almond butter, and one spoonful of raw clover honey. Blend until it becomes a smooth consistency and beautiful pink color. This is a great way to start your day or a midday snack. It is thick and luxurious and totally satisfying.

Thanks for the inspiration, Kreation. Don’t worry, I will still buy yours because it is packed with additional goodness, but this is a great substitute.

Breakfast Sushi

My dear friend Lisa of @eatcleanla inspired me to make this breakfast sushi. It is absolutely delicious and looks impressive! Don’t worry, it will be our little secret that it is super easy to make.

You will need smoked salmon, spinach, and 2 eggs. Of course you can add more ingredients and use more eggs. Spray a non stick pan with coconut oil and heat to medium heat. Lightly beat the eggs in a bowl and pour into the pan. Leave the eggs alone to cook in one flat layer, do not flip. When cooked through, slide onto a plate. Place a layer of spinach on top of the eggs, then top with a layer of thinly sliced smoked salmon. Carefully roll this into a sushi roll, starting from one of the edges. Tightly roll until you get to the other edge. Next, cut the roll into little section about an inch or so wide to make a cut sushi roll. The colors are vibrant and it looks and tastes so good! The added bonus is you are getting lots of protein and omega 3’s.

The posibilities are endless for flavor combinations. I’m so glad I tried this and you will be too!


Bloom That

I recently discovered the flower delivery service, Bloom That. It is a local company based in San Francisco and now offered delivery here in Los Angeles.
