Creamy Dreamy Potato Leek Soup

On this chilly day in LA, I decided to make Potato Leek soup. There is something so cozy and comforting about a bowl of warm, yummy soup on a winter day.

Ingredients: 1/4 cup (1/2 a stick) unsalted butter

4 large leeks, white parts only, cleaned and sliced

8 medium russet potatoes, peeled and thinly sliced

1 tablespoon of coarse salt

5 cups of low sodium chicken broth

2 cups of half and half

1 cup heavy cream

pinch of nutmeg

ground pepper

Directions: Melt butter in a large saucepan over medium heat. Add leeks and cook, stirring until soft. Transfer to a large pot and add potatoes, broth, and salt. Simmer until the potatoes are tender, about 30 minutes. Using a ladle, pour into a blender and blend until smooth. Pour mixture into pot. Add heavy cream, half and half, nutmeg, and pepper to taste. Make sure it is heated to your liking and serve. 🙂
